Walnut Muffins

Ingredients

2 tablespoons vegetable oil
1 -- egg
1/2 cup milk
1 -- grated orange ring
1 cup plus 2 tablespoons full of flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped walnuts

Instructions

  1. Grease muffin cups or line them with paper. 

  2. Beat oil, egg, milk and orange rind in a bowl. 

  3. Combine flour, sugar, baking powder and salt.  Sift into milk mixture and stir briefly to blend. 

  4. Drop by tablespoons into prepared pan and bake at 425F for 15 to 25 minutes.
