Waldorf Carrot Salad

Carrots and apples combine for a colorful and healthy salad.


2 cups peeled shredded carrots
2 cups unpeeled chopped tart apples
1 cup chopped celery
1/3 cup chopped dates
1/3 cup plain nonfat yogurt
1/4 cup fat-free mayonnaise
3 tablespoons orange juice


  1. In a medium bowl, combine the carrots, apples, celery and dates.
  2. In a small bowl, mix together the yogurt, mayonnaise and orange juice. Pour over the carrot mixture, tossing gently.
