Vanilla beans combine with pineapple and strawberries for a refreshing dessert.

Perfect for summer picnics or Memorial Day cookouts, this fruit dish is mellowed by a subtle flavor of vanilla. Look for vanilla beans in your grocery’s spice section. To use, slit them open lengthwise and scrape out the seeds.


2 cups pineapple cubes
1 cup strawberry slices
1 cup blueberries
1/4 cup sugar
-- Seeds from 2 vanilla beans


  1. Combine fruit, sugar and vanilla beans seeds in a large bowl. Toss well. Makes about 4 cups.
