Ultimate Red Pasta Sauce

This rich, flavorful sauce is a sneaky way of getting veggies in your diet.


1 medium onion, chopped
1/2 cup chopped celery
1/2 cup finely chopped carrots
1 teaspoon minced garlic
1 (28-ounce) can pureed tomatoes
1 (6-ounce) can tomato paste
1/2 cup water or chicken broth
1 tablespoon dried oregano
1 bay leaf
1 teaspoon dried basil
2 tablespoons chopped parsley
pinch sugar
Salt and pepper to taste


  1. In a large pan coated with nonstick cooking spray, saute the onion, celery, carrots and garlic over medium high for 5 minutes. Add the tomatoes, tomato paste, water, oregano, bay leaf, basil, parsley, sugar, salt and pepper. Cook over a medium heat for another 15 minutes. Remove bay leaf before serving. Serve over pasta of your choice.
