Udon Noodles with Sesame and Tofu

This refreshing pasta salad uses the ready to eat smoked or baked tofu.

2 tablespoons rice or cider vinegar
1 tablespoon soy sauce
1 tablespoon dark sesame oil
1/4 teaspoon crushed red pepper flakes
1 teaspoon minced garlic
1 teaspoon minced ginger
1 (9-ounce) package fresh Udon (Asian Style) noodles
1 (8-ounce) package smoked tofu (teriyaki flavored), cut into 1-inch pieces
1/2 teaspoon salt
1 1/2 cups diced cucumber
1 cup shredded carrots
1/2 cup green onions
2 teaspoons toasted sesame seeds


  1. To prepare vinaigrette, combine vinegar and next five ingredients.  Whisk well.
  2. To prepare pasta, prepare udon noodles according to package directions, omitting salt.  Combine udon noodles and next 6 ingredients.  Drizzle with vinaigrette and toss well.  Serve room temperature or chilled.
