Turkey Caprese Wrap

Makes a healthy, yet satisfying lunch when served with raw organic baby carrots, a piece of fruit, and a handful or two of homemade trail mix (made with nuts, dried fruit, and dark chocolate chips).

1 multigrain tortilla or favorite healthy flatbread
2-3 slices all-natural/organic turkey breast, sliced
1/2 cup cherry tomatoes, sliced in half if large
1/4 cup fresh mozzarella cheese, cut into small cubes (I like smoked mozzarella)
2 tablespoons fresh basil, minced
1 teaspoon minced shallot or red onion
drizzle of olive oil


  1. In a small bowl, combine the tomatoes, mozzarella, basil, shallot or red onion and olive oil.
  2. Mix to combine.
  3. Layer turkey slices on tortilla, add tomato salad, and roll into a wrap.
  4. Slice in half and secure each half with a toothpick, if desired.
