Trader Joe’s Roasted Butternut Squash and Quinoa Salad Copycat

Ingredients

1cup spinach
1cup arugua
1/4cup quinoa, cooked
1/2 cup butternut squash, cooked
1tablespoon raisins
1tablespoon cranberries, dried
1/2ounce goat cheese, crumbled
Dressing
1/4cup canola oil
1/4cup rice vinegar
2tablespoons soy sauce
1tablespoon honey
2tablespoons water
1/4teaspoon garlic powder
1/4teaspoon sugar

Instructions

  1. Place all ingredients in salad bowl and toss.
  2. To make the dressing, whisk all dressing ingredients in a small bowl. Drizzle 2 tablespoons of dressing over salad.
