Tomato and Scallion Salad with Raspberry Vinegar


8 Ripe tomatoes, sliced
Ground pepper
2teaspoons sugar
3tablespoons raspberry vinegar
3 scallions, thinly sliced
1/4cup parsley, coarsely chopped


  1. Sprinkle tomatoes with salt, pepper and sugar, then with raspberry vinegar. Toss in scallions and parsley and serve.
