Made with only three ingredients but rich in flavor, this chicken recipe is the ultimate quick-and-easy dinner.
Use good creamy, sheep's milk feta for this Greek-inspired chicken dish.
- 4 -- chicken quarters
- 4 ounces feta
- 2 -- (10-ounce) packages frozen spinach, thawed and squeezed
- 2 cloves garlic, crushed
- -- Lemon, fresh
- -- Oregano, to taste
- Preheat oven to 375F.
- In a medium bowl, mix feta, spinach and garlic. Divide the mixture evenly and stuff underneath the skin of each chicken quarter.
- Squeeze fresh lemon juice over each chicken quarter and sprinkle each evenly with oregano.
- Bake for one hour or until chicken registers 165F on a meat thermometer.
