Three-Ingredient Chicken

Made with only three ingredients but rich in flavor, this chicken recipe is the ultimate quick-and-easy dinner.

Use good creamy, sheep's milk feta for this Greek-inspired chicken dish.


4 -- chicken quarters
4 ounces feta
2 -- (10-ounce) packages frozen spinach, thawed and squeezed
2 cloves garlic, crushed
-- Lemon, fresh
-- Oregano, to taste


  1. Preheat oven to 375F.
  2. In a medium bowl, mix feta, spinach and garlic. Divide the mixture evenly and stuff underneath the skin of each chicken quarter.
  3. Squeeze fresh lemon juice over each chicken quarter and sprinkle each evenly with oregano.
  4. Bake for one hour or until chicken registers 165F on a meat thermometer.
