Three Cheese Potato Gratin

Three cheeses coupled with a splash of cream bake up with thinly sliced Yukon Gold potatoes for a comforting side to roast chicken.

Ingredients

6 Yukon Gold potatoes
1/2cup grated Parmigiano Reggiano cheese
4ounces crumbled feta cheese
2ounces grated Gruyere or Swiss cheese
8ounces half-and-half
1dash fresh grated nutmeg
1/2teaspoon salt

Instructions

  1. Preheat oven to 375F.
  2. Thinly slice peeled potatoes on a mandolin. Place in cold water to cover.
  3. Layer potatoes in a shallow gratin dish with cheeses. Heat half-and-half in microwave at high for 1 minute. Gently pour over potatoes.
  4. Bake 45 minutes to 1 hour, until potatoes are tender and gratin is browned and bubbly.
