Thai-Style Limeade with Vodka
- Yield 6 servings
Thai limeade gets its unique flavor from the tradition of steeping the rinds in boiling water for a few minutes.
Ingredients
- 6 fresh limes
- 1/2 cup sugar
- 2 1/2 cups boiling water
- 1/4 teaspoon salt
- 12 ice cubes, plus more for serving
- 8 ounces vodka
- Mint sprigs
Instructions
- Squeeze limes into a pitcher, reserving rinds.
- Place rinds in large bowl and cover with sugar. Pour in boiling water; steep 5 to 10 minutes. Add salt and stir thoroughly.
- Strain warm liquid into lime juice. Add ice cubes and vodka and refrigerate. Serve over ice, garnished with lime wedges and a sprig of mint.
