Thai-Style Cucumber Mint Salad

Ingredients

1large cucumber or 4 to 5 Kirby cucumbers, skin on and thinly sliced
1/2medium red onion, thinly sliced
1/2cup chopped fresh mint
1/4cup chopped fresh basil
1/4cup chopped cilantro
1tablespoon peanut oil
2tablespoons rice vinegar
1tablespoon sugar
1tablespoon soy sauce
1teaspoon Thai red chili paste
1/4cup chopped peanuts

Instructions
