Thai Grilled Sea Bass

Ingredients

5 tablespoons oyster sauce
2 1/2 tablespoons soy sauce
4 cloves garlic, chopped
1 tablespoon cilantro
1 teaspoon ground black pepper
4 sea bass filets
3 stalks lemongrass, roughly chopped and crushed
1 tablespoon dill, roughly chopped
8 Banana or Lotus leaves, cut into 10x12 inch pieces
Dipping Sauce
1/2 cup lime juice
1/2 cup soy sauce
3 1/2 tablespoons honey
3 thai green and red chiles
3 cloves garlic
1 tablespoon cilantro

Instructions

  1. To prepare the marinade, combine the oyster sauce, soy sauce, garlic, coriander, ground black pepper and mix well.
  2. Place the sea bass in the marinade along with lemongrass and dill. Leave in the fridge for 10 minutes.
  3. Wrap marinated fish in banana leaves, fasten and bake in the oven at 420 degrees for 15 minutes or grill for 15 minutes on each side.
  4. Prepare dipping sauce by blending all of the ingredients in a food processor until smooth. Use to taste.
