Texas Caviar
- Yield 20 servings
Ingredients
- 1 cup sugar
- 3/4 cup cider vinegar
- 1/4 cup canola oil
- 1 tablespoon water
- 1 can black-eyed peas, drained
- 1 can black beans, drained
- 2 cans white shoepeg corn, drained
- 1 small onion, chopped
- 5 -- chopped jalapenos (w/o ribs, seeds for mild; with ribs & seeds for hotter)
Instructions
Mix the following. Heat until boiling, then cool:
1 C sugar
3/4 C cider vinegar
1/4 C oil
1 TBSP water
Combine the following and mix with above liquid:
1 can black-eyed peas, drained
1 can black beans, drained
2 cans white shoe-peg corn, drained
1 small chopped onion
chopped jalapeno peppers (I used 5 without ribs and seeds. Use ribs/seeds
for hotter)
Salt and pepper to taste and allow to marinate 24 hrs before serving. Serve
with either scoops tortilla chips or scoops Fritos.
