Terrific Taco Ring

  • Yield: 8 servings

1pound ground beef
1-- (1 1/4-ounce) package taco seasoning mix
1cup grated Cheddar cheese
2tablespoons water
2-- (8-ounce) packages refrigerated crescent rolls
1medium green bell pepper
1cup salsa
1/2head lettuce, shredded
1medium tomato, chopped
1bunch green onions, chopped
1/2cup chopped black olives
-- Sour cream

  1. Preheat oven to 375F.  Cook beef in a skillet until browned; drain fat.  Add taco seasoning and cheese and stir until cheese melts.  Arrange crescent dough triangles in a circle on a 13-inch baking stone or pizza pan; place long edge of triangles to inside of circle, overlapping triangles at the base with points to outside, leaving an empty 5-inch diameter circle in the center.  Use an ice cream scoop to spoon meat mixture over triangles.  Fold outside points of triangle over meat and tuck under base at the center; filling will not be completely covered.  Bake 20 to 25 minutes or until golden brown.  Meanwhile, cut top off of bell pepper and remove seeds.  Fill pepper with salsa.  Place pepper in center of baked taco ring.  Surround pepper with lettuce, tomato, onions and olives.  Garnish each section of ring with a dollop of sour cream.
