SW’s Loaded Big Country Tater

  • Yield <p>4</p> servings


4 medium potatoes, baked
1/4 pound green beans, fresh
4 ounces country ham, chopped
4 tablespoons sour cream
4 tablespoons creamy horseradish seafood dip/sauce
1/2 stick butter, unsalted
1 tablespoon chives, chopped
2 teaspoons verglades seasoning **fav seasoning salt**
1 teaspoon course black pepper


  1. Scoop potato flesh out of peel. Keep warm
  2. In a mediun sized heated frying pan, fry country ham pieces for 3-4 minutes
  3. Preheat deep fryer to 350 degrees. Fry green beans for 3 minutes or until green beans are crispy. Slice green beans on a bias
  4. Mash potatoes in a mixing bowl. Add butter, everglades and pepper. mix well. Fold in chives, seafood sauce, sour cream, 1/2 green beans & 1/2 ham. Heat potato mixture in microwave for 2-3 minutes
  5. Add potato mixture back into the warm potato skins. Top with remaining green beans and ham. Serve and enjoy!
