You are here: Home » Recipes » SW’s Loaded Big Country Tater SW’s Loaded Big Country Tater Recipe by Sherri Logan Williams Yield <p>4</p> servings PrintEmail Ingredients 4 medium potatoes, baked1/4 pound green beans, fresh4 ounces country ham, chopped4 tablespoons sour cream4 tablespoons creamy horseradish seafood dip/sauce1/2 stick butter, unsalted1 tablespoon chives, chopped2 teaspoons verglades seasoning **fav seasoning salt**1 teaspoon course black pepper Instructions Scoop potato flesh out of peel. Keep warm In a mediun sized heated frying pan, fry country ham pieces for 3-4 minutes Preheat deep fryer to 350 degrees. Fry green beans for 3 minutes or until green beans are crispy. Slice green beans on a bias Mash potatoes in a mixing bowl. Add butter, everglades and pepper. mix well. Fold in chives, seafood sauce, sour cream, 1/2 green beans & 1/2 ham. Heat potato mixture in microwave for 2-3 minutes Add potato mixture back into the warm potato skins. Top with remaining green beans and ham. Serve and enjoy!
