Sweet Potato Curls

1 large Sweet Potato
1 dash Salt (Optional)
1/4 cup Oil - Fresh


  1. Use one sweet potato per person to serve.  Peel sweet potatoes with potato peeler.  Cut away any bruised spots.  Continue paring potatoes with peeler into large bowl.  Salt lightly (optional).
  2. Fry in hot oil until lightly browned.  Drain on paper towels and serve immediately.
