Sweet Heat Lime Chicken with Olive Cilantro Couscous

Ingredients
- 1 tablespoon olive oil
- 1 pound boneless chicken breasts, cubed
- 6 tablespoons soy sauce
- 2 tablespoons lime juice
- 5 tablespoons sugar
- 1/2 teaspoon red pepper flakes
- 1 teaspoon fresh lime zest
- Olive Cilantro Couscous:
- 1 tablespoon olive oil
- 1 cup couscous
- 1 (6 oz) can California ripe black olives, sliced
- 1/3 cup fresh cilantro, minced
Instructions
Sweet Lime Chicken:
In a large skillet, heat oil, cook cubed chicken until no longer pink Remove from skillet and set aside.
In a small bowl, combine soy sauce, lime juice, sugar, pepper flakes and lime zest. Stir until sugar is dissolved. Pour into the hot skillet, bring to a boil. Cook for approximately 3-4 minutes until sauce starts to reduce. Add chicken and simmer for 3-4 minutes longer, stir to glaze chicken.
Olive Cilantro Couscous:
In a medium saucepan, heat 1 TBSP olive oil, add onion. Cook until tender. Add chicken stock, bring to a boil; stir in couscous. Remove from heat and let sit for 5 minutes. Stir in sliced olives and cilantro.
To serve:
Spoon the olive cilantro couscous on 4 serving plates, top with the sweet lime chicken.
