Sweet Creamed Corn

2pounds frozen corn kernels
3/4cup heavy cream
3teaspoons sugar
2teaspoons cornstarch
1/4cup cold water
Salt and freshly ground black pepper, to taste


  1. Place corn in a large saucepan and add cream and sugar, bring to a boil, reduce heat and simmer 10 minutes. Dilute cornstarch with 1/4 cup water and add to corn. Stir until thickened and season with salt and pepper. If you like, you can place the mixture in a blender or a food processor fitted with the metal blade and puree a little.
