PrintEmail Ingredients 1 tablespoon olive or canola oil1 large onion, chopped2 garlic cloves, minced Water, optional1 (32-ounce) container plain low-fat yogurt1 cup frozen chopped spinach, defrosted and squeezed to remove excess moisture Salt and freshly ground black pepper, to taste Instructions Heat oil in a large nonstick saute pan or skillet over medium heat. Add onions and garlic and cook 10 to 12 minutes, stirring occasionally until well browned. Add a few drops of water if needed to prevent sticking. Remove from pan and transfer to a nonreactive large mixing bowl. Add yogurt and spinach, mix well and season with salt and pepper.
