Sweet Apple Spice Muffins

Ingredients

2cups whole wheat flour
3teaspoons baking powder
1/2teaspoon each cinnamon and nutmeg
1cup plus 2 tablespoons of milk
1-- egg, beaten
1/4cup brown sugar
3tablespoons vegetable oil
1cup grated raw apple
1/3cup chopped walnuts

Instructions

  1. Preheat oven to 375F. 

  2. In a small bowl combine flour, baking powder, cinnamon and nutmeg, tossing with fork to mix thoroughly.  Set aside.

  3. In medium mixing bowl combine milk, eggs, brown sugar and vegetable oil.  Beat to blend well.  Add dry ingredients, stirring lightly just long enough to moisten.  Fold in apples and nuts.  Fill buttered or papered muffin tins 2/3 full with batter and bake at 375F for 20-25 minutes.
