You are here: Home » Recipes » Super Brunch Casserole Super Brunch Casserole Recipe by Kelli Yield 4 servings PrintEmail Ingredients 4 medium eggs or egg beaters5 whole Mushroomsone cup Onions2 cups Shredded cheese of choice1 package Panchetta Instructions Grease one medium sized casserole dish with butter or margarine of choice.Preheat oven to 350 degrees. In large bowl mix eggbeaters, or eggs, finely chopped onions, finely chopped and washed mushrooms in bowl. Mix all together. Add one half cup of shredded cheese of choice to other ingredients in bowl, such as cheddar, mozzarella, etc. Mix well. Take panchetta out of wrapper, and place in frying pan on medium high. Cook till done and browning. Let cool. Chop and add to bowl and mix with other ingredients. Now that everything is mixed, pour into casserole dish, and add remaining cheese on top of cassserole. Put in oven and cook for 45 min. to one hour or until browning and bubbly , and making sure egg mixture throughout casserole is cooked as well. Serve immediately. Garnish with sour cream and serve with buttery rolls, croissants or toast of choice.
