Chicken, Strawberry and Chevre Salad

3cups chopped roasted skinless, boneless chicken breasts (about 3 breasts)
1 1/2cups sliced fresh ripe strawberries
4ounces Chevre (Goat Cheese), crumbles
1/4cup roasted almond slices
1tablespoon poppy seeds or black sesame seeds
1/4cup extra virgin olive oil
2tablespoons champagne or white wine vinegar
1tablespoon honey
1/4teaspoon salt
1/8teaspoon black pepper
6cups baby salad greens

Combine first 4 ingredients in a large bowl. Combine poppy seeds and next 5 ingredients (poppy seeds through pepper) in a small bowl, stirring well with a whisk. Pour over chicken mixture; toss lightly with salad greens, but well to coat. Serve garnished with warm crostini. 4 servings


1 small baguette French bread
extra-virgin olive oil
coarse Kosher salt
black pepper

Preheat oven 375 degrees.
Slice baguette crosswise about 1/2 inch thick. Brush each side of each slice of bread with extra-virgin olive oil and sprinkle each with coarse salt and pepper. place on a baking sheet. Bake until crisp and golden, turning each slice after 5 minutes baking and bake about 5 minutes more.
