Summer Salad with Mint, Watermelon and Feta

Serve in chilled parfait or champagne glasses or over mixed greens or spinach leaves as a salad.
Ingredients
- 2 cups chopped watermelon, seeded
- 2 tablespoons chopped fresh mint
- 1/2 cup feta cheese
- 1 tablespoon extrapvirgin olive oil
