Summer Salad with Mint, Watermelon and Feta

Serve in chilled parfait or champagne glasses or over mixed greens or spinach leaves as a salad.

Ingredients

2 cups chopped watermelon, seeded
2 tablespoons chopped fresh mint
1/2 cup feta cheese
1 tablespoon extrapvirgin olive oil
Juice of 1 lemon

Instructions

  1. Combine all ingredients.
