Peanut Chicken Pitas

- 2 cups cooked chicken, shredded
- 1/2 cup chopped peanuts
- 1/2 cup diced red onions
- 3 tablespoons course black pepper
- 1/2 cup honey
- 1 teaspoon sea salt
- 2 tablespoons soy sauce
- 2 cups shredded lettuce
- 4 -- pita pockets
First heat up a pan with 3 tablespoons of corn oil. Add the onions and fry with medium heat till slightly translucent in color. Pour the shredded chicken in and fry it with the onions for a few minutes.
Next toss in the peanuts, honey, pepper, salt and soy sauce. Stir fry it in the pan for about 10 minutes.
Finally stuff the honey-peanut chicken into the pita bread pockets and top it off with shredded lettuce.
