Strawberry Cake

1box white cake mix
1medium package strawberry gelatin
3/4cup vegetable oil
1cup water
4medium eggs
1/2cup crushed frozen strawberries, well-drained
1box confectioners sugar
1stick butter (room temperature)
1/2cup crushed frozen strawberries, well-drained


  1. Stir the cake mix and gelatin together in a large bowl, then add the vegetable oil and water and mix until well-blended, about 2 to 3 minutes.
  2. Add the eggs, one at a time, mixing after each egg.
  3. Add the drained strawberries and stir to mix.
  4. Divide batter among 3 greased, lightly floured cake pans or 9 x 13 inch oblong.
  5. Bake for 30 minutes at 300 degrees for layer cake or 30-45 minutes at 325 degrees for oblong.
  6. While cake is cooling, mix confectioners sugar and butter together. Then add strawberries slowly until you reach the right consistency. This may require less than 1/2 cup.
  7. Ice cake after it has completely cooled. Top with a few fresh strawberry halves if desired.
