You can find frozen sliced okra in the grocery store if you want to take a shortcut or if okra is not in season.
- 2 large onions, chopped
- 2 pounds fresh okra, trimmed and sliced
- 1 (10-ounce) can diced tomaotes and green chilies
- Salt and pepper to taste
- 1/2 teaspoon sugar
- Saute onion over medium heat until tender, about 4 minutes. Toss in okra, making sure to stir occasionally. Cook for an additional 9-10 minutes, or until okra no longer has a stringy texture.
- Combine with tomatoes, salt and pepper, and sugar. Cover and simmer for 30 minutes, until okra is tender.
