You can find frozen sliced okra in the grocery store if you want to take a shortcut or if okra is not in season.
- 2 large onions, chopped
- 2 pounds fresh okra, trimmed and sliced
- 1 (10-ounce) can diced tomaotes and green chilies
- Salt and pepper to taste
- 1/2 teaspoon sugar
- In a pot coated with nonstick cooking spray, saute onion over medium heat until tender, about 4 minutes. Add okra and cook until okra is not stringy, stirring occasionally, 9 to 10 minutes. Add tomatoes, salt and pepper, and sugar. Cover and continue cooking over low heat until okra is tender, about 30 minutes.
