Stafford’s Country Gingerbread

Ingredients

1cup sugar
1cup molasses
1cup Canola oil
3large eggs
1teaspoon cinnamon
1teaspoon ginger
1teaspoon salt
2teaspoons baking soda
2tablespoons boiling water
1cup boiling water
2cups all-purpose flour

Instructions

  1. Preheat oven to 350 F. Lightly oil a 13 in x 9 in pan. Beat together the first seven ingredients. Mix soda with 2 tablespoons boiling water and add to the first mixture. While beating, add 1 cup boiling water and flour alternately–start with flour and end with water. Pour into prepared pan and bake 40 minutes.
