Squash Casserole

  • Yield 6-8 servings


6-8 medium Yellow squash cut into 2 " pieces
1 medium Onion diced
1 -- Bell pepper diced (red will give nice color)
1 -- egg beaten in small bowl
12 ounces Grated cheddar cheese
3/4 cup Bread Crumbs
6 tablespoons Melted Butter
1/2 teaspoon Salt
1/4 teaspoon Pepper


In a large sauce pan or pot steam first three ingredients until tender about 10 minutes. Let cool. Preheat oven to 325 degrees. In a casserole dish add cooled steamed vegetables, salt and pepper, then gently mash leaving some squash chunks.Pour in eggs and melted butter then stir in bread crumbs. Gently mix in 8 ounces of greated cheese. Top with rest of greated cheese.  Cover and bake 20 minutes. Uncover and bake for 10 more minutes.
