Spoon Bread

1 cup yellow corn meal
2 cups boiling milk
1/4 pound butter
4 -- eggs, separated
1 teaspoon salt
1 teaspoon sugar


Pour the cornmeal, salt and sugar into the boiling milk, stirring constantly and vigorously until the mixture leaves the sides of the pan. Remove from heat. Add butter, then egg yolks. Mix well. Beat egg whites stiff, then fold into mixture. Pour into buttered casserole and bake for 30 minutes at 400 degrees. Serve immediately.
