Spinach and Olive Pasta

6ounces cooked medium egg noodles
1tablespoon olive oil
1medium purple onion, chopped
1pound spinach leaves
1cup sour cream
2cloves garlic
1 1/2teaspoons basil
1 1/2teaspoons oregano
1cup wedged black olives
1cup grated jack cheese
1cup grated parmesan


Cook and drain noodles according to package directions. While noodles are boiling, saute onion, minced garlic cloves and spinach in olive oil until onion is translucent and spinach is wilted (about 4-5 minutes). Add sour cream, basil, oregano and olives to spinach mix and heat through gently. Add both kinds of cheese to noodles and toss to combine. Combine noodles with spinach mixture, and serve hot.
