Spinach and Olive Pasta

6 ounces cooked medium egg noodles
1 tablespoon olive oil
1 medium purple onion, chopped
1 pound spinach leaves
1 cup sour cream
2 cloves garlic
1 1/2 teaspoons basil
1 1/2 teaspoons oregano
1 cup wedged black olives
1 cup grated jack cheese
1 cup grated parmesan


Cook and drain noodles according to package directions. While noodles are boiling, saute onion, minced garlic cloves and spinach in olive oil until onion is translucent and spinach is wilted (about 4-5 minutes). Add sour cream, basil, oregano and olives to spinach mix and heat through gently. Add both kinds of cheese to noodles and toss to combine. Combine noodles with spinach mixture, and serve hot.
