You are here: Home » Recipes » Spinach and Olive Pasta Spinach and Olive Pasta Recipe by kathleenbeasley Yield 4 to 6 servings Prep 5-10 minutes Cook 10 minutes PrintEmail Ingredients 6 ounces cooked medium egg noodles1 tablespoon olive oil1 medium purple onion, chopped1 pound spinach leaves1 cup sour cream2 cloves garlic1 1/2 teaspoons basil1 1/2 teaspoons oregano1 cup wedged black olives1 cup grated jack cheese1 cup grated parmesan Instructions Cook and drain noodles according to package directions. While noodles are boiling, saute onion, minced garlic cloves and spinach in olive oil until onion is translucent and spinach is wilted (about 4-5 minutes). Add sour cream, basil, oregano and olives to spinach mix and heat through gently. Add both kinds of cheese to noodles and toss to combine. Combine noodles with spinach mixture, and serve hot.
