Spicy Summer Gazpacho
- Yield 4 to 6 servings
Ingredients
- 3 -- Ripe Tomatoes
- 1 -- Cucumber, seeded but not peeled
- 1 -- Red Bell Pepper
- 1 -- Green Bell Pepper
- 1 -- Jalapeno Pepper, seeded
- 1/2 -- Sweet Onion
- 3 -- Garlic Cloves
- 3 cups Spicy V8 Juice
- 1/4 cup Olive Oil
- 1/4 cup Red Wine Vinegar
- 1/2 tablespoon Salt
- 1 teaspoon Pepper
- 1 dash Hot Sauce
Instructions
Roughly chop the tomatoes, cucumbers, peppers, and onion into 1-inch cubes. Put each vegetable separately into a food processor or blender fitted with a steel blade and pulse until it is coarsely chopped.
After each vegetable is processed, combine them in a large bowl and add the garlic, V8 juice, vinegar, olive oil, salt, and pepper. Add hot sauce to taste. Mix well and chill before serving.
Optional: Garnish with sour cream, and/or fresh basil.
