You are here: Home » Recipes » Spicy Summer Gazpacho Spicy Summer Gazpacho Recipe by cgblake Yield 4 to 6 servings PrintEmail Ingredients 3 -- Ripe Tomatoes1 -- Cucumber, seeded but not peeled1 -- Red Bell Pepper1 -- Green Bell Pepper1 -- Jalapeno Pepper, seeded1/2 -- Sweet Onion3 -- Garlic Cloves3 cups Spicy V8 Juice1/4 cup Olive Oil1/4 cup Red Wine Vinegar1/2 tablespoon Salt1 teaspoon Pepper1 dash Hot Sauce Instructions Roughly chop the tomatoes, cucumbers, peppers, and onion into 1-inch cubes. Put each vegetable separately into a food processor or blender fitted with a steel blade and pulse until it is coarsely chopped. After each vegetable is processed, combine them in a large bowl and add the garlic, V8 juice, vinegar, olive oil, salt, and pepper. Add hot sauce to taste. Mix well and chill before serving. Optional: Garnish with sour cream, and/or fresh basil.
