Chicken Burgers Monterey

Chicken Burgers:
1/2 pound ground chicken
3/4 cup cornbread crumbs
1 -- egg lightly beaten
1/4 cup finely minced onion
1 tablespoon minced red pepper
1 tablespoon minced garlic
1 tablespoon minced chipotle peppers with some of the adobo sauce
2 tablespoons olive oil
Cream Cheese Chipotle Spread:
2 tablespoons chipotle in adobo
1/2 cup whipped cream cheese
1 tablespoon minced cilantro
1 clove garlic pressed
2 tablespoons lime juice
-- Salt
-- Pepper
Hamburger buns
-- Sharp cheddar cheese
-- Avocado
-- Lettuce


Chicken Burgers:
In a large bowl combine the chicken, cornbread crumbs, egg, onion, garlic and chipotle peppers. Form into 4 burger sized patties. Preheat the oil in a pan over medium/low heat, fry the burgers 3-5 minutes on each side or until gold brown on each side. Put the cheese on top of the burger and allow it to melt.

Cream Cheese Chipotle Spread:
In a food processor combine the cream cheese, chipotle, cilantro, garlic, lime juice, salt and pepper, mix until smooth and creamy.

Spread a layer of the Cream Cheese Chipotle Spread on both sides of the bun, place the burger on the bottom and top with the avocado and lettuce.
