- 2 tablespoons Olive oil
- 1 large Zucchini
- 1 tablespoon Minced garlic
- 1 large Tomato
- 1/2 cup cheese (Parmesan or Cheddar)
- 1/4 teaspoon salt and pepper
- Heat olive oil in teflon pan or black iron skillet.on medium high.
- Shred raw zucchini right into skillet spreading to cover bottom of pan.
- Salt and pepper and add minced garlic.
- Cook 3 minutes, then add chopped tomatoes.
- Cook another 3 minutes.
