Speedy Zucchini

  • Yield 4 servings


2 tablespoons Olive oil
1 large Zucchini
1 tablespoon Minced garlic
1 large Tomato
1/2 cup cheese (Parmesan or Cheddar)
1/4 teaspoon salt and pepper


  1. Heat olive oil in teflon pan or black iron skillet.on medium high. 
  2.  Shred raw zucchini right into skillet spreading to cover bottom of pan. 
  3. Salt and pepper and add minced garlic. 
  4. Cook 3 minutes, then add chopped tomatoes. 
  5. Cook another 3 minutes. 
  6. Add cheese and cook till just melted.  How fast was that?
