South Asian Chicken Wraps

2 tablespoons rice vinegar
3 tablespoons fish sauce
3 tablespoons lime juice
2 tablespoons brown sugar
1/4 teaspoon white pepper
1/2 teaspoon red pepper flakes
1 pound chicken breast, chopped in 1/2 inch cubes
1 onion, chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
2 cloves garlic, minced
2 tablespoons vegetable oil
1 tablespoon cilantro leaves
1 cup fresh basil leaves
3 tablespoons oyster sauce
1 tablespoon soy sauce
4 large whole wheat wraps
1 cup shredded green leaf lettuce
cilantro and basil leaves for garnish


1. Wisk together marinade ingredients and pour over chicken. Set aside.

2. Heat oil in large skillet on medium-high

3. Add garlic, onion and 1 T. cilantro leaves to pan, cook until onion starts to become translucent

4. Add bell peppers and heat for one additional minute

5. Add chicken and marinade to pan. Cook until chicken is cooked through and sauce begins to thicken (approximately 5 minutes)

6. Stir oyster sauce, soy sauce and 1 cup basil leaves into chicken mixture

7. Assemble wraps by placing lettuce and chicken mixture on the center of each wrap. Top with a few fresh basil and cilantro leaves, roll wraps closed and enjoy!
