Sour Cream Oatmeal Raisin Bars

1 3/4cups oatmeal
1 3/4cups flour
1cup brown sugar
1teaspoon baking soda
1cup butter or margarine, softened
4 egg yolks, beaten
1 1/2cups sugar
3tablespoons corn starch
1teaspoon vanilla
2 cups California raisins
2cups sour cream


  1. Preheat oven to 350F.
  2. In a small mixer bowl, mix oatmeal, flour, brown sugar, soda and softened butter or margarine until crumbly. Press 2/3 of the mixture into a 13 x 9-inch pan. Reserve 1/3 for topping.
  3. Bake crust 10 minutes. Remove from oven and set aside.
  4. In a medium saucepan, add filling ingredients. Cook until thickened over medium heat, stirring constantly (the mixture can burn easily).
  5. Pour thickened filling over the baked crust. Top with reserved crumbs.
  6. Bake 20 minutes. Let cool. Cut into small bars. Leftovers should be refrigerated.
