Sour Cream Banana Bars

"This Sour Cream Banana Bar recipe was given to me by a friend years ago, and I have made these moist bars many times. They are especially good chilled."


1 1/2 cups granulated sugar
1 cup sour cream
1/2 cup margarine, softened
2 eggs
1 1/2 cups mashed bananas (about 3 large bananas)
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1/2 cup chopped walnuts
1/4 cup margarine
2 cups confectioners' sugar
1 teaspoon vanilla extract
3 tablespoons milk


  1. Preheat the oven to 350 degrees. Grease and flour a 15 x 10-inch baking dish. Cream together the granulated sugar, sour cream, and margarine. Mix in the eggs one at a time on low speed. Beat in the bananas and vanilla, scraping the sides of the bowl occasionally. Add the flour, salt, and baking soda. Beat on medium speed for 1 minute. Stir in the nuts. Spread the batter evenly into the prepared pan. Bake for 20 to 25 minutes, until the center is done. Set aside to cool.
  2. To prepare the frosting, lightly brown the margarine in a saucepan, stirring to prevent burning. When lightly browned, remove from the heat. Beat in the confectioners’ sugar, vanilla, and milk. Pour over the bars.

Tips From Our Test Kitchen:Keep overripe bananas on hand in your freezer. Pull them out to thaw when the mood strikes to make these delicious bars.
