Soothing Yogurt Mint Raita

Perfect for saucing grilled vegetables, especially eggplant, this minty sauce is cool and refreshing.
- 2 cups plain yogurt
- 1 cup peeled, seeded, chopped cucumbers
- 1/4 cup minced red onions
- 1/2 cup packed fresh mint leaves, chopped (2 tablespoons dried)
- Kosher salt, to taste
- Combine all ingredients well in a nonreactive large bowl. Makes 21/2 cups.
