Soothing Yogurt Mint Raita

Perfect for saucing grilled vegetables, especially eggplant, this minty sauce is cool and refreshing.

Ingredients

2 cups plain yogurt
1 cup peeled, seeded, chopped cucumbers
1/4 cup minced red onions
1/2 cup packed fresh mint leaves, chopped (2 tablespoons dried)
Kosher salt, to taste

Instructions

  1. Combine all ingredients well in a nonreactive large bowl. Makes 21/2 cups.
