Soothing Yogurt Mint Raita

Ingredients

2cups plain yogurt
1cup peeled, seeded, chopped cucumbers
1/4cup minced red onions
1/2cup packed fresh mint leaves, chopped (2 tablespoons dried)
Kosher salt, to taste

Instructions

  1. Combine all ingredients well in a nonreactive large bowl. Makes 21/2 cups.
