Smoky White Bean Chicken Chili

1 (12-ounce) can tomatillos, diced
2 (14 1/2-ounce) cans diced fire-roasted tomatoes
3 garlic cloves, minced
1/4 cup tomato paste
1 teaspoon cumin
1/4 teaspoon white pepper
1 teaspoon salt
2 (15-ounce) cans white beans, such as cannellini, rinsed and drained
2 chicken breasts, cooked and chopped or shredded
4 slices smoked applewood bacon, cooked and crumbled
1 cup beer
1/2 teaspoon Tabasco


  1. Combine tomatillos, tomatoes, garlic, tomato paste, cumin, white pepper and salt in a large saucepan. Bring to a simmer and cook 30 minutes. Add beans, chicken, bacon and beer and cook 30 minutes. Stir in Tabasco. Makes about 10 cups.
