Smart Oven Roasted Sweet Potato Batons

This simple and quick recipe is genius compared to sweet potatoes with marshmallows.

6 small (6-ounce) sweet potatoes
2 tablespoons olive oil
3/4 teaspoon salt, to taste
3/8 teaspoon pepper, to taste


  1. Preheat oven to 375F.
  2. Peel sweet potatoes and cut into sticks, 1/3 inch baton (small sticks).  Toss sweet potatoes with olive oil.  Spread on a baking sheet, and bake for 25 minutes, tossing half way through.  Bake until a soft when pierced with a fork.  When they’re finished, season with salt and pepper to taste.  Serve warm.
