Slow-Cooker Spice-Rubbed Pork

Ingredients
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 -- (3-pound) bone-in pork shoulder or butt
- 1/2 cup chopped fresh parsley
- 1 -- lemon, finely grated rind and juice
- 2 -- garlic cloves, minced
Instructions
- Combine coriander and next four ingredients (coriander through pepper). Rub over pork. Place in slow-cooker and cook according to manufacturer’s instructions. Before serving add parsley, lemon zest, lemon juice and garlic.
