Skillet Pork Chops

  • Yield 4 servings

This simple and delicious pork entree makes a great weeknight dish.


4 -- pork chops
2 tablespoons cooking oil
-- Salt and pepper to taste
1 cup uncooked rice
1 cup tomatoes
1 -- onion, sliced
1 cup beef consomme
1/2 teaspoon thyme
1 -- green bell pepper, sliced


  1. Salt and pepper pork chops and brown in cooking oil.  Remove and set aside.  Pour uncooked rice into dripping in skillet and cook, stirring constantly until rice turns a light brown.  Place remaining ingredients in the skillet with rice.  Lay pork chops on top.  Cover and simmer around 45 minutes, or until liquid is absorbed.
