Shrimp Deluxe Pizza
- Yield: 6 to 8 servings
Shrimp and a great assortment of my favorite fresh ingredients make this an amazing pizza. For a vegetarian pizza, simply omit the shrimp.
Ingredients
- 1 (12-inch) thin pizza crust
- 1tablespoon olive oil
- 1tablespoon minced garlic
- 1tablespoon dried basil leaves
- 1/4pound sliced mushrooms
- 2cups fresh baby spinach
- 1/2pound medium peeled shrimp, seasoned and cooked
- 1/2cup chopped tomatoes
- 1/4cup chopped red onion
- 1/4pound fresh mozzarella cheese, sliced, or 1 cup shredded, part-skim, mozzarella cheese
Instructions
- Preheat oven 400F. Brush crust with olive oil and garlic and garnish with basil.
- Sauté mushrooms about 5 minutes in a small nonstick skillet. Stir in spinach and cook until wilted.
- Layer spinach over crust and top with remaining ingredients.
- Bake 8 to 10 minutes, until cheese is melted.
