Easy Shrimp Curry
- Yield 4 to 6 servings
Make it meal--serve it over rice!
Ingredients
- 3 tablespoons butter
- 1/4 cup minced onion
- 1 1/2 teaspoons curry powder
- 3 tablespoons flour
- 3/4 teaspoon salt
- 3/4 teaspoon sugar
- 1/8 teaspoon ground ginger
- 1 cup milk
- 1 cup chicken broth
- 2 cups raw shrimp, cleaned
- 1/2 teaspoon lemon juice
Instructions
- Melt butter. Add onions and curry. Blend in flour and seasonings. Cook until thick and smooth. Add milk and broth and bring to a boil. Stir until thickened. Add shrimp and cook slowly until shrimp turn pink. Blend in lemon juice.
