Shredded Chicken Over Biscuits

- 1 pound Cooked shredded chicken
- 1 cup fresh or frozen peas
- 2 tablespoons butter
- 2 tablespoons flour
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup milk
- 1 teaspoon poultry seasoning (optional)
- 1 package refrigerated biscuit dough
Heat up the peas and chicken separately on the stovetop or microwave while you prepare the sauce. If the chicken is not already flavored or seasoned such as with chicken stock during its original preparation, add 1 teaspoon poultry seasoning to the meat.
Heat the butter in a large saucepan over low heat until melted. Add the flour, salt and pepper and stir until bubbly. Stir in milk and heat to boiling, stirring constantly. Boil and stir for one minute. Remove from heat.
Once the white sauce is ready, drain the water out of the peas and chicken, and stir both into the sauce.
We usually serve this over refrigerator dough biscuits or homemade biscuits. But it is just as good served over rice, mashed potatoes or even toast.
