Chicken Breast with Roasted Pepper Relish

4-- boneless and skinless chicken breasts
-- Salt & Pepper to taste
-- 4T olive oil
1-- 16 ounce can of red roasted red bell peppers, drained and diced
-- 3,cloves of fresh garlic, minced
-- 2T olive oil
-- 1T capers, drained, rinsed and chopped
4-- flat anchovy fillets in olive oil
pinch of crushed red pepper flakes
-- Salt & Pepper to taste
-- 2T Italian flat leaf parsley, chopped fine


Heat a non stick skillet over med/high heat with the 4T of olive oil. Salt and pepper both sides of chicken breasts. Place each breast in the pan and cook about 7min. on each side, or until meat juices run clear. Remove chicken from pan, to a heated dish to keep warm.

In another skillet, heat olive oil over medium heat, add garlic,capers,anchovies, and crushed red pepper, saute about 1 min. Add diced peppers and saute till just heated through. Pour this pepper relish over chicken and sprinkle with parsley.
