Savory Walnut Breakfast Biscuits

Ingredients

1 cup all purpose flour
4 tablespoons all purpose flour
1 tablespoon sugar
4 teaspoons baking powder
1/2 teaspoon salt
1/2 cup vegetable shortening
3/4 cup California walnut pieces
3/4 cup shredded Gruyere cheese
1/2 cup chopped, crisp bacon
1/2 cup finely diced Granny Smith apple (skin on)
1 large egg
1 large egg yolk
2/3 cup whole milk

Instructions

  1. Combine the flour, sugar, baking powder and salt in a mixing bowl and stir to blend them.  Rub the shortening into the flour mixture until the mixture resembles cornmeal. 

  2. Toss the walnut pieces, shredded cheese, chopped bacon and diced apple with the flour mixture until well dispersed.

  3. Whisk together the egg, egg yolk, and milk to blend them.  Add the egg mixture to the flour mixture and mix the two with a fork until just blended.  The resulting mixture will look lumpy.

  4. Pat the dough out onto a floured surface to a thickness of ¾-inch.  Cut biscuits from the dough using a 2-inch round cutter.  Place the biscuits on an ungreased sheetpan and bake them at 400F, in the middle of the oven, until golden brown, approximately 8 to 10 minutes.  Serve warm with butter.
