Divide bread dough in half. Roll and stretch first half into a rectangle, about 10×14 inches. Using a board (not floured), press dough to edges of board to hold it while working. Reserving ¼ cup of cheese for topping, combine with remaining (4) ingredients. Sprinkle half the mixture on stretched dough, leaving a 1-inch border. Top with ½ olives and capers. Roll up, starting with a long end. Gently press ends together to form 5-6-inch ring. Place seam-side down on one end of an oil sprayed baking pan. With kitchen scissors, make 10 cuts across ring, cutting through layers almost to base. Repeat process with second half of dough. Loosely cover and allow to rise 1 hour in a warm place. Preheat oven to 350F. Sprinkle reserved cheese on top of rings. Bake in center of oven 35 minutes. Cool on wire rack. Makes two rings.
