Sauerkraut and Ribs
- Yield servings
- 2 quarts sauerkraut
- 2 cups brown sugar
- 1 large onion, diced
- 1 large apple, cored and diced (skin on)
- 2 pounds country pork ribs
- Preheat oven to 350 degrees. In a large roaster, combine sauerkraut, brown sugar, onion, and apple. Pour water up to the top of sauerkraut. Place ribs on top. Cover and cook for 4 hours. Check occasionally to be certain water has not evaporated. Add more water, 1 cup at a time, if needed. Uncover ribs, and cook an additional hour.
Tips from Our Test Kitchen: Be sure to check the ribs now and then. If the water gets too low, the sauerkraut can become overcooked. This dish is excellent with potatoes.
