Sauerkraut and Ribs

Ingredients

2quarts sauerkraut
2cups brown sugar
1 large onion, diced
1 large apple, cored and diced (skin on)
water
2pounds country pork ribs

Instructions

  1. Preheat oven to 350 degrees.  In a large roaster, combine sauerkraut, brown sugar, onion, and apple.  Pour water up to the top of sauerkraut.  Place ribs on top.  Cover and cook for 4 hours.  Check occasionally to be certain water has not evaporated.  Add more water, 1 cup at a time, if needed.  Uncover ribs, and cook an additional hour.

Tips from Our Test Kitchen: Be sure to check the ribs now and then.  If the water gets too low, the sauerkraut can become overcooked.  This dish is excellent with potatoes.
