Sara’s Meatloaf

  • Yield 10-12 servings


2 pounds ground beef
1 large chopped onion
2 slices white bread (challah is best)
2 large eggs
1 can peeled, whole, cooked tomatoes
1 can tomato paste
1/4 cup milk
4 ounces uncooked bacon
1 teaspoon salt
1/2 teaspoon fresh ground black pepper


  1. Soak the bread in the milk and squeeze to get out the milk.
  2. Drain the tomatoes and reserve the juice. Break up the tomatoes with your hands.
  3. Mix ingredients together (except for bacon and tomato juice).
  4. Form the mixture into a large loaf and place in a pan lined with aluminum foil.
  5. Place bacon slices on top of the loaf.
  6. Pour the tomato juice over and around the meat loaf.
  7. Bake at 350 degrees F for 1 hour.
  8. Remove the meatloaf from the oven and let it “rest” for 10 minutes so it absorbs the juices, before slicing.
